The seafood aromas of Podere Pendolino's dishes pair beautifully with the elegant and intense aromas of yellow fruit, wild strawberries, iris, and fennel seeds in the Trentino sparkling wines. Months on the lees have given these wines a varied bouquet and a good structure and flavor. For years, these wines have seduced us as a simple aperitif, thanks to their crisp, carbonated flavor that lends a lightness to the tasting. But the pleasure doesn't end there: the saline palate provided by the Chardonnay and Pinot grapes pairs beautifully with delicate fish dishes, served as tartare or lightly seared. This evening's challenge is to accompany our tasting guests in discovering sea fish crudités expertly prepared by our seafood chefs with Trentino sparkling wines. This is the challenge: not only Alpine essences or fish from mountain lakes, but also Mediterranean scents are subtly enhanced by expert Trentino wines.
