Wedding Cake new trends

We like to talk about Wedding Cake also because our Catering Albatros Ristorazione has had an internal pastry laboratory that is renewed annually for years. In what sense? 

First of all, the technologies, increasingly professional, high-performance, suitable for new decorations and processing of raw materials. 

We invest a lot every year in professional technologies for the kitchens of our Catering and the Podere Pendolino Restaurant, also to satisfy our kitchen staff, a team of young passionate chefs who are constantly attentive to new trends.

The styles change, as if they were fashion collections; the design changes, from the most elaborate to the minimal cakes; from the traditional to the green cakes. Obviously, seasonality has an impact especially when we talk about fresh summer fruit or cakes with sunflowers, like those recently packaged.

 Having left behind the bad memory of American cakes, decorated with sugar icing in the style of the Tower of Babel, we have returned to the classic Italian style with refined but not exaggerated decorations. Flowers or fruits alternate in a cascade, giving an effect of depth and lightness. 

Millefoglie remains the most loved by Italians, filled with Chantilly cream and crispy puff pastry inside. Do you know what they also like? The spectacular Champagne Tower, in the Italian sparkling wine version, which pours out a riot of bubbles, a wish for joy and good luck.
